I’d rather call it a cake when it comes to banana bread due to the texture this bread-cake has chopped nuts and raisins in it.

I wanted to add chocolate chips too but that would be too much *grins* the icing is marzipan liquid by dr. oetker; love the almond flavor; however, the bread-cake itself has a slight lemon flavor; so there you go, its more tutti fruity bread cake http://indorecipe.com/index.php?option=com_garyscookbook&Itemid=100003&func=detail&id=290

All things are Buddhism to me, so I decided to teach some wisdom while/by baking a cake :^). Hope you enjoy it! How can a cake be Buddhist? I tried some yesterday and I’m craving some more.. It was so good…….

here it is..

Number-1 banana Cake

“This is a very versatile and fast cake recipe. Not only is it moist and delicious, the same batter can be used to make banana bread and muffins. Delicious frosted with chocolate or cream cheese frosting.”

INGREDIENTS:

2 1/2 cups all-purpose flour

1 tablespoon baking soda

1 pinch salt

1/2 cup unsalted butter

1 cup white sugar

3/4 cup light brown sugar

2 eggs 4 ripe bananas, mashed

2/3 cup buttermilk

1/2 cup chopped walnuts

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).

Grease and flour 2 – 8 inch round pans.

In a small bowl, whisk together flour, soda and salt; set aside.

In a large bowl, cream butter, white sugar and brown sugar until light and fluffy.

Beat in eggs, one at a time.

Mix in the bananas.

Add flour mixture alternately with the buttermilk to the creamed mixture.

Stir in chopped walnuts.

Pour batter into the prepared pans.

Bake in the preheated oven for 30 minutes.

Remove from oven, and place on a damp tea towel to cool. 2 – 8 inch round layers
