Are there any recipes out there for plain banana muffins?

    Just make them and leave the nuts out.
    Or make plain muffins and substitute the banana for some of the milk

    They have over 1,000 of recipes that is submited by users of the site, you can search by ingredients, ethnic/regional, etc.

    They also have a rating system, so you would know what recipe is good and what recipe is not good.

    plus you can change the amount of servings and the site will automatically adjust the measurements for the ingredients.

    and of course, you can learn how to make the stuff

    2 cups wholemeal Self Raising flour, 1 quarter cup of sugar, 2 egg whites, 1 and a half cups of ripe mashed banana, 3 quarters teaspoon bicarb soda, half a cup of apple sauce (from a jar) Beat egg whites and sugar for one minute in a bowl, stir in mashed banana. Add bicarb soda to apple sauce then add to bowl. Gently fold the mixture until just mixed, don't beat as this will make the muffins tough. Spoon into a twelve cup muffin tray bake 20 mins at 200 degrees C or 180 degrees for a fan force oven. You can add sultanas, choc chips, ginger, anything if you wish.

    Banana Muffins

    INGREDIENTS:
    1 1/2 cups all-purpose flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    3 large bananas, mashed
    3/4 cup white sugar
    1 egg
    1/3 cup butter, melted

    DIRECTIONS:
    Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda and salt. Set aside.

    In a large bowl, combine bananas, sugar, egg and melted butter. Add flour mixture, and beat until smooth. Scoop into muffin pans.

    Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.

    Napoleon's Banana Muffin

    INGREDIENTS:
    6 very ripe bananas, mashed
    1/2 cup brown sugar
    1/4 cup honey
    1/4 cup spiced rum
    1/4 cup cognac
    3 cups all-purpose flour
    1 teaspoon baking soda
    2 teaspoons baking powder
    1 teaspoon salt
    1 1/2 cups white sugar
    2/3 cup brown sugar
    2 eggs, lightly beaten
    10 tablespoons unsalted butter, melted
    3 tablespoons butter
    1 cup brown sugar
    3 tablespoons all-purpose flour
    2 teaspoons ground cinnamon

    DIRECTIONS:
    Preheat the oven to 375 degrees F (190 degrees C). Grease two twelve-cup muffin tins.

    In a mixing bowl, mix bananas, 1/2 cup brown sugar, honey, rum, and cognac with an electric mixer until smooth.

    In a large bowl, whisk together 3 cups flour, baking soda, baking powder, and salt. In another bowl, cream white sugar, 2/3 cup brown sugar, eggs, and melted butter. Pour banana mixture and creamed egg mixture into the flour, and stir until just combined.

    Spoon mixture into muffin tins, filling cups 3/4 full.

    In a small bowl, mix together 1 cup brown sugar, 3 tablespoons flour, and cinnamon. Cut in 3 tablespoons butter until mixture resembles coarse crumbs. Sprinkle over batter in muffin tins.

    Bake muffins in preheated oven for 20 minutes, or until done.
