Serves: 16

1 box banana cake mix - unprepared
1 sm. box instant banana pudding - unprepared
4 eggs
2 med. ripe bananas - mashed
1 cup finely chopped walnuts
1/2 cup vegetable oil
1/2 cup water
1 tsp. banana extract
3/4 tsp. ground cinnamon

-With an electric mixer, beat all ingredients together until smooth, being careful not to over mix.
-Fill greased large muffin tins or mini loaf pans 3/4 full with batter.

Ingredients:

2 bananas
2 eggs
2 cups of all purpose flour
1 cup sugar
1 cup yoghurt
2/3 cup of vegetable oil
2 teasp. vanilla
2 teasp. baking powder
1 teasp. baking soda

Method:

Mash banana. Mix in oil, sugar, eggs, vanilla and blend together. Add flour, baking powder, and baking soda. Finally add yoghurt and bake at 350 degrees F. in paper cups or muffin tray. Makes 18 muffins.

Banana Fritters (Sweet) 

5 Bananas (well ripen) (If u have 2 bananas thn use them and adjust othr Ingredients with this 2)
150g white flour
1 small sized egg
2 tablespoons sugar
1/4 cup thick coconut milk
1/2 teaspoon salt
1/4 teaspoon baking soda
Water
Some Kitul honey (optional)
Oil for deep frying

In a bowl put in the flour, milk, sugar, salt, baking soda and the egg (beaten well) mix to form a thick batter, using a little water. Leave the mixture covered for about half an hour.

Cut the bananas lengthwise (4&quot; long), dip in the above mixture and carefully put it into the very hot oil for frying. Fry until golden brown, do not burn. Serve/eat while warm with honey or plain.
