Banana Sandwich Cake

Ingredients

4oz butter
6 oz sugar
2 eggs
2 mashed bananas
1 level teaspoon baking soda
2 tablespoons milk
8 oz flour
1 teaspoon baking powder

Method

1. Cream butter and sugar.
2. Add eggs.
3. Add mashed bananas.
4. Dissolve baking soda in boiling milk and add to mixture.
5. Add flour and baking powder last.
6. Bake in two greased baking tins for 20 minutes at 180 degrees C (350 degrees F).
7. Fill with a mock cream.
8. Ice the top of the cake.

Ingredients:

1 mango
medium pineapple
1 banana
2 dates
3 tablespoons plain yoghurt (live preferably)
1 teaspoon desiccated coconut
teaspoon manuka honey (organic is best)
A handful of ice

Method:

1. Peel the mango and cut off the flesh around the stone.

2. Peel the pineapple and cut into pieces.

3. Juice the mango and pineapple together.

4. Remove the stones from the dates.

5. Put the combined juice into a blender and add all the rest of the ingredients, including the dates.

6. Whiz the mixture together to create a smooth blend.

7. Pour into glasses and enjoy.

Serves 1 to 2

Zingy Banana Breakfast Drink

This is an energy packed breakfast that is easy to prepare. It is a slow-release energy drink that will keep you going all morning with a refreshing zingy taste to get you active.

Ingredients:

mango
1 banana
1 large orange
30ml (2 tablespoons) wheat bran
10-15ml (2-3 teaspoon honey to taste)
15ml (1 tablespoon) sesame seeds

Method:

1. Use a small, sharp knife to skin the mango and slice the flesh off the stone.
2. Peel the banana and break it into pieces.
3. Place the mango and banana pieces into a food processor or blender.
4. Squeeze the juice from the orange and add to the mixture.
5. Add the bran, honey and sesame seeds.
6. Whizz until the mixture is smooth and creamy.
7. Pour into glasses and serve.

1 banana
One generous handful of strawberries, raspberries or other soft berries
1 glass of low fat cold milk or soya milk

Method:

1. Peel the banana and break into chunks.

My preference is to use non-fat milk as I find it mixes in the blender to a thicker mixture be warned though do not over mix or it becomes too thick. Add a few drops of vanilla to flavour.

6. Banana Porridge

For a tasty porridge incorporating banana, have a look at the orange and banana porridge recipe. It takes about ten minutes to prepare and will warm you up and fill you on a winter morning before you go about your daily tasks.

7. Banana Pancakes

There are a number of different ways to prepare banana pancakes, some cooking the bananas on top of the pancake while some include the banana in the pancake mix. The simplest way is often my favourite and we usually make the pancakes, slice the bananas on a long angle, add either whipped cream or a little sauce, say maple syrup and roll it up. Yum!!

This is a great drink for body building. Wheatgerm, the most nutritious part of the wheat grain, is packed with B and E vitamins, protein and minerals. When you combine it with bananas, you get a great carbohydrate-rich drink that is boosted by the goodness of orange juice and linseed and is perfect before exercise. Linseeds contain essential fatty acids that are good for the heart.

Ingredients:

30ml/2 tablespoon wheatgerm
1 large banana, chopped
130gm/4oz (a generous cup) soya yoghurt
15ml/1 tablespoon linseed (flax seeds)
Juice of 1 lime
Juice of 1 large orange
Mineral water (optional)
Linseed and grated lime zest, for decoration

Method:

1. Put the wheatgerm, the banana, the yoghurt and linseed in a blender or food processor.

2. Blend until smooth then scrape down the sides of the bowl.

3. Stir well.

4. Add the lime and orange juice to the yoghurt mixture.

5. Blend again until evenly mixed.

6. Pour the juice into a large glass and top up with mineral water, if desired.

7. Use the linseed and lime zest to decorate, then serve.

500gm (1lb) sugar
Juice and grated rind of 1 lemon

Method

1. Slice the bananas into a large saucepan.
2. Cover the bananas with the sugar, juice and grated rind of the lemon.
3. Bring to the boil.
4. Boil rapidly for 1-2 minutes, stirring well.
5. Bottle in small jars.

Do not make in any larger quantity.
